Execute production in the Pastry area and stations according to company recipes and presentation, as directed by the Executive Pastry & Bakery Chef or Chef de Partie Pastry.
Maintain assigned section recipe files and ensure they are available to staff.
Practice batch cooking and preparation (for soufflés, puddings, crème brûlée, and other pastry items) and demonstrate an understanding of ingredient consumption required for daily production in accordance with company recipes.
Supervise and mentor Commis Pastry in an assigned service station, assist in on-the-job training for new hire Pastry staff as directed by the Executive Pastry & Bakery Chef or Chef de Partie Pastry.
